Kaya (Coconut egg jam)
Kaya is a coconut egg jam made from coconut milk and eggs, flavored by pandan juice and sweetened by sugar. The color varies from green (from the pandan juice) to light brown (due to caramelization of sugar). It is usually used to make kaya toast and Malaysians eat it as breakfast (with a cup of coffee!).

Ingredients:
I blended some pandan leaves and water to yield about 75ml of pandan juice.
- Pandan (screwpine leaf) juice
- 250ml of coconut milk
- 5 eggs
- 230g of sugar

Mix eggs, sugar, pandan juice and coconut milk. Whisk well.
Double boil the mixture.
Make sure you keep stirring it every 5-10 minutes.
I was paranoid and stood by the double boiler throughout the cooking process :)
Basic rule of double boiling:
It is important to make sure that the water from the bottom pot does not touch the bottom of the top pot. Else, you might be cooking the eggs into scrambled eggs!

Keep stirring / cooking until the mixture thickens into jam.
It should take about 40 - 60 minutes.
p/s: I messed up the double boiling part and the kaya became lumpy :( I'll need to make it again!
As a quick fix, I blended the kaya after it cooled down. That does the trick haha.

Transfer the kaya to a bottle when it has cooled down.
Refrigerate it and enjoy!
